Hah! I was wrong in a good way.
Turns out that when I convert the monster blocks back into LibreOffice, I don't need to delete the top row. The conversion removes a blank top row automatically.

Also discovered a pandoc command that will apply a template, instead of some more esoteric trickery to do the same thing.

Still have to touch each table to shade every other row, but that is not nearly as fiddly.

I took the monsters section and exported it in something similar to the DMsGuild 5e adventure style and to Basic Fantasy style.
